Christmas week….baking week….

This past week the sound of the mixer drowned out the Christmas music. The aroma from the coffee pot filled the air and the dog hated me cause he got no attention.

I cracked open the kitchen window to let in a breeze and let out the aroma of my baking.

What did I bake??? Mint Chocolate Chip Cupcakes

Sugar Cookies with Apricot filling

Red Velvet Cupcakes

Peppermint Chocolate cookies dipped in White Chocolate sprinkled w/candy canes.

Yes, I was a busy woman. No kids and I decide to bake…..what was I thinking! I should have been out and about shopping, the spa, mani and pedi. Ha-Ha.  I had fun baking. As I posted pictures on my Facebook, my daughter would comment, “No fair, we aren’t there!” The funny thing is that they don’t eat much sweets, so I decided to give most of these away. I did leave some for us, but giving them felt so much better.

During the week, I caught up with many friends that have touch my heart throughout the year. And it was a pleasure to share my baking with them. As Christmas Day approached, my husband asked me what I wanted for Christmas. Now, I am a practicable girl and I don’t ask for much. I just want to make them happy, so I asked for a KitchenAid hand held mixer. He looked at me funny and said, “I can’t just get you that!” I laughed. He bought me an IPod Touch! What a great hubby I have!

The kids arrived on Christmas Day and were home for 4 hours and left….go figure. Ha-Ha. They were here just in time for Tamales and Rice. Grandma left them with her famous Rice Pudding…..oh sooooo goood! Not sure if I will ever master that recipe, but if I do, it will never be the same when she makes it.

I hope you all had a great Christmas and I hope that you ring in 2011 with love, joy, happiness and know that God is always there for you. I have enjoyed sharing my baking blog with you and I hope you continue to read. Until next time……Happy New Year!

#3’s Birthday – 16 WOW!!!!!

If you are wondering who #3 is, he is my third child Alex. Alex is the youngest and has turned 16 yrs old this month. Wow….I am old. Wait…no I am not! I am a young chicken that can bake the heck out of anything. 🙂

His favorite cupcake is Red Velvet, so I whipped up some batter and cream cheese frosting and YUMMY!!!! I added a little touch of writing on the cupcakes and a splash of glitter. Yes, boys can have glitter too. I am proud of Alex. This month he has accomplished so much. Battle of the Falcons, were he performed “Bohemian Rhapsody” by Queen on the saxophone with 4 others friends. He made it through animation class….that was FUN…not! He volunteered and performed for a Senior Living Community and just an overall great KID!

Happy Birthday again Alex! I love you!
