National Margarita Day

Sunday, February 22 is a great day! Hanging out in West University, Houston, Texas at Under the Volcano enjoying a delicious Margarita on the rocks. As we sit on the patio with fans blowing and it’s 75 degrees, two people having funny conversations, one person working on their laptop, another sitting reading the paper and their dog laying on the ground. I love Houston atmosphere and hospitality. People smile at you, say hello and are courteous to share a table with you. Sunday’s are my favorite day to relax out on a patio in Houston.


What do your Sunday’s look like? Do you enjoy the outside? Are you a inside bar only person? Whatever your preference is, enjoy yourself and surround it with good people, good food and good beverages.




And she is back…….

Friends…I took a long … long… break from baking and I am now back and ready to bake and blog! Now, I have baked some cupcakes and a pie or two, just haven’t blogged about them, but let me give you a sneak peek.

The frostings of fall and Think Pink!

Fall is my favorite season! Halloween, Thanksgiving, Festivals, Farmers Markets and just the turning of the leaves… other states cause Texas’ trees don’t turn orange. 😦

So far, I have baked 3 delicious types of cupcakes. I think my favorite and most rewarding is the Reese’s Peanut Buttercup. The frosting on these decadent little cakes is sooooo gooood!! I literally licked the bowl clean! Plus the little surprise that I hid inside was even better, an actual mini Reese’s Peanut Buttercup, YUM!!

Wanting pumpkin bread so bad, but still craving the chocolate, I decided to venture out and bake Pumpkin Chocolate Chip Muffins topped with cream cheese frosting. My best friends son and daughter love pumpkin bread and I wanted to give them a little surprise. They gobbled them up! We met at St. Arnold’s Brewery in Houston for a little beer and some goodies. And as you can see this kid wanted to pick off the icing!

But after 2 or 3 muffins, I think he still wanted more!

Now, the most recent cupcake was for a Mary Kay party I hosted at my home. Knowing MK is pink and October is Breast Cancer Awareness month I wanted to incorporate pink ribbons on my cupcakes. So I came up with Coconut Cupcakes with cream cheese frosting and coconut shavings. They were a hit and I can honestly say they were beautiful. I will make this my yearly October cupcake.

My other best friends mother is a cancer patient and it really hits home. Please ladies, get checked, check yourself and be aware of your health. Let’s fight this cancer!!!

Peachy Keen Fuzzy Navel Cupcakes – Booze Cakes

1/2 cup orange juice
1/2 cup Peach Schnapps
2 1/2 cups Flour
1 tablespoon baking powder
1/2 teaspoon salt
1 stick of unsalted butter
1/2 cup of sugar
2 eggs
2 ripe peaches, diced

1/2 cup peach preserves
1/2 cup orange marmalade
1/4 cup orange juice
1/4 cup peach schnapps

Roasted peaches
6 ripe peaches
2 tablespoons unsalted butter, melted
1/2 cup light brown sugar

preheat oven to 350 degrees. grease and flour 12 cup cupcake pan

Cupcakes: Combine orange juice and peach schnapps and set aside In a separate bowl, combine flour, baking powder, and salt.
In a mixing bowl, cream butter and sugar for 3 – 5 mins or until light and fluffy. Beat in eggs one at a time. Add flour and juice mixtures to the batter in three alternating additions. When fully combined, beat for 1 min. Gently stir in the peaches by hand. Spoon batter into the pan and bake for 20 mins or until toothpick inserted comes out clean.

Sauce: In a saucepan, combine peach preserves, marmalade and orange juice, stirring occasionally. Once the ,ixture has thinned (about 5 mins) remove from heat and stir in the peach schnapps.

Roasted peaches: Line a baking sheet with aluminum foil and put the peaches on top. Brush the tops with melted butter and sprinkle with brown sugar. Roast 25 – 35 mins or until the sugar begins to bubble. Let cool, then remove and discard pits and dice or slice the peaches.

“Cocktail Cupcakes” Yum!!!!

For the past few months I had been thinking about baking alcoholic cupcakes. You have seen them do it on Cupcake Wars or on other TV shows, so I decided to go for the recipe book. I got my recipes from “Booze Cakes” and let me just say “what a book”!! It even had a booze metter – πŸ˜‰ πŸ™‚ πŸ˜€

I planned it out, made sure I picked the right cupcakes, the right drink and perfect evening. I haven’t bought booze like this in a very…..very long time. I didn’t know what kind of liquor to choose….cheap or expensive. I just knew that I wanted them to taste good. As I went to Spec’s with my husband and son, I was overwhelmed with all the liquor bottles and the different color bottles and sizes. So I settled for small containers, but better booze. I was happy…..also with the wine samples they were handing out. :).

The next day the baking began. With the help from a good friend, I know I could not have done this without her.

She helped me mix, pour and bake. The table was set, the candles were lit and the menu was in place.

The biggest hit of the night were the Mojito Cupcakes. When I tasted the batter I knew those were the best. The mint and lime were perfect together and the whipped topping gave it the cook effect. I fell in love!

The Peachy Keen Fuzzy Navel – real peaches with Peach Schnapps….yummy! I smothered these with Orange/Peach Marmalade that contained Peach Schnapps as well.

Long Island Ice Tea Cakes – I added the liquor to this, then soaked them in more liquor. Not sure if you can tell the darker lines on the bottom of the cakes.Β  These were very potent on the Booze Meter! πŸ˜€

Wine MerlotΒ  were a bit dry. I am thinking that it changes the texture of the cake so it was not as moist.

To me “it’s all about the cake in a cup”. LOL

I enjoyed baking these cupcakes, having a great times with friends and family. I hope they enjoyed the evening as much as I did. I will look for more “tasty cakes” and have another get together. So, I recommend this book, go out and buy it, bake up some goodies for you and your friends and have a party. They are fun interesting and very GOOD!

This post is not about cupcakes. I haven’t really baked a lot these past 2 months because of the SENIORITIS that I think I have. πŸ™‚ See my daughter graduates this year. She didn’t want a party, she said that she would wait for her 18th birthday. I was ready to back cupcakes with diplomas, caps and medals, but she said it would be more special on her birthday. Harry Potter comes out the week of her birthday, so HP cupcakes might be the order…:) The following “note” was posted on Facebook and I thought I would share it with you. I changed it up a bit in order to reflect a more up to date status. So here it is…..

Class of 2011 – Marissa Lynn

In less that 40 hours she graduates high school. In less that 40 hours she will throw away her high school notes, sell her high school books, donate her high school uniforms and remember the good times and the bad times she had at Houston Christian High School. She began high school at Jersey Village and without a doubt she knew in her heart that JV was not a school for her. The smaller setting of HCHS is what she needed. And without hesitation, she made the change and the change was AMAZING! Even though she left behind several good friends, she met new friends that are now a big part of her life. I have seen her grow from a shy little girl, to a confident, yet reserved young lady. She has big dreams and those dreams will come true because of what she has accomplished throughout her high school years. She overcame stage fright by performing a solo in front of an audience of 100+ people. She danced her way gracefully in the Doxa Dance CO her junior year, learned to play guitar and kept up her violin lessons every week. That same year, she jumped right in to becoming an amazing sound technician for that years musical, “Thoroughly Modern Millie”. That is when she knew what her major would be…AUDIO PRODUCTION. And with the help of Matthew Hager, a high school friend of mine, he gave her more insight and better direction that she wanted it even more.Β  She became President of the orchestra her senior year and took piano to brush up on her music theory. Again, she was sound technician for “Othello” and that was just by giving her 2 weeks notice.Β  must say the long nights were a nightmare, but she was confident and did her best to keep her grades up. She took Digital Music class and she had a blast. Learning to mix, write and produce songs all in her bedroom…..that is where it all begins. She has written two songs, produced them and one of them even won her a $3,000 scholarship to the Art Institute of Houston. Her DM teacher gave the staff and faculty a CD that had all the students songs and I was amazed at the talent that we have at HCHS. Marissa sang “Marry Me” by Train and I never knew that my daughter could sing…..she did GREAT! Nonetheless, she mixed that song in 3 hours, it was due the next day! WOW!

You know, God is so good and I can say that I am truly blessed to have the kids that He gave me. He gave me a daughter that….yes, is just like me and that is okay. I wouldn’t change a thing….well, maybe some things. πŸ™‚

I owe it all to her teachers, her mentors, her friends, my friends, my family.Β  Because without you, your prayers and your encouragement, Marissa would not be who she is now and who she is going to become in the future.

This is my second graduation….two years ago Andy graduated and in two years Alex will graduate. Three different kids, three different paths and I am proud of them all!

To all the graduates in 2011, I say to you, may your paths be narrow, may your roads be rough and know that Jesus Christ is always with you. Congrats!

Long lost baking cupcake post….

Wow! It has been a while since I have posted about cupcakes. But nevertheless…..I was baking up a storm. Since the bridal shower I have baked for a baby shower, a Church group and for the entire school! Let’s talk about it!

Two couples having babies days apart and I was asked to bake cupcakes for their shower. How could I say no? They are my favorite peeps!

My next cupcake venture……120 cupcakes for my school. Every teacher and staff member received a cupcake, thanking them for all their hard work through our ISAS preview. This was fun!





I loved every minute of this….especially when I baked for Emma. She is a little girl who is battling cancer right now, but I know that God is good and He will heal and is healing. They had a community garage sale for her the beginning of March and the first day we got rained out. I baked cupcakes for the bake sale and I didn’t want them to sit around another day, so I delivered them to Emma and her family. My daughter and I spent time with her that rainy cold morning and I could not have asked for a better day.
