Wedding of the year!!!

I can honestly say that so far, these are my favorite cupcakes! They were special to me because of the special couple. I was honored to be asked to bake cupcakes for Amanda Potter’s bridal shower. I was nervous, but I knew that these had to look pretty and taste DELICIOUS! I needed the right wrappers and the cutest trinkets, thanks to my daughter, Marissa, for helping me find them. The diamond rings, the double hearts and the ivory wrappers…Perfection!

Vanilla and Chocolate Cupcakes with

Raspberry Preserves and Fresh Raspberries.

The house smelled of vanilla and fruit, then came the Buttercream frosting with raspberry puree. As the frosting turned into a pastel pink color I smiled and I knew that these were my favorite by far. Every detail had to be perfect…down to the pearls.

I added powdered sugar on some of them, cause I knew some of our guests could not eat the frosting.

I was careful on the delivery and now for the presentation! I had three great ladies that helped me with the display.

Christmas week….baking week….

This past week the sound of the mixer drowned out the Christmas music. The aroma from the coffee pot filled the air and the dog hated me cause he got no attention.

I cracked open the kitchen window to let in a breeze and let out the aroma of my baking.

Yes, I was a busy woman. No kids and I decide to bake…..what was I thinking! I should have been out and about shopping, the spa, mani and pedi. Ha-Ha.  I had fun baking. As I posted pictures on my Facebook, my daughter would comment, “No fair, we aren’t there!” The funny thing is that they don’t eat much sweets, so I decided to give most of these away. I did leave some for us, but giving them felt so much better.

During the week, I caught up with many friends that have touch my heart throughout the year. And it was a pleasure to share my baking with them. As Christmas Day approached, my husband asked me what I wanted for Christmas. Now, I am a practicable girl and I don’t ask for much. I just want to make them happy, so I asked for a KitchenAid hand held mixer. He looked at me funny and said, “I can’t just get you that!” I laughed. He bought me an IPod Touch! What a great hubby I have!

The kids arrived on Christmas Day and were home for 4 hours and left….go figure. Ha-Ha. They were here just in time for Tamales and Rice. Grandma left them with her famous Rice Pudding…..oh sooooo goood! Not sure if I will ever master that recipe, but if I do, it will never be the same when she makes it.
